We like passionfruit because it is a fruit after our own heart – thrives in temperate climates, likes to be watered regularly, peaks during summer, considered exotic, and is generally found to be sweet, (but can be a bit sour at times). It also goes damn well in a kettle sour. The flavours and acidity of the fruit work really well in a sour beer and that is why we’re doing it again!
